FOOD

A favorite food among the Kanak is Bougna which consists of taro, sweet potato, banana, and chicken, fish, or seafood wrapped in banana leaves and cooked in a ground oven. Bougna is served at every important occasion or meal.

"Among Broussards, typical fare includes large helpings of pork, beef, and deer (both domesticated and wild)."

However, "Nouméans enjoy a diverse diet that includes French cuisine, Tahitian salads, and Asian foods such as spring rolls and Indonesian bami (a noodle dish)."

"In the Northern and Loyalty Islands provinces, many families live almost entirely off the produce from their gardens. In Nouméa, imports supplement local products. Fish and seafood are abundant in supermarkets and at the downtown market, where fruit and vegetable stands offer papaya, mangoes, pineapple, passion fruit, coconuts, several types of bananas, and varieties of yams, taro, and sweet potatoes." says Culturegrams Online Database.
